Sesame Seared Sirloin Tip Steak

  • Sirloin Tip Steak (6 to 8 Ounces or 0.38 to 0.50 lbs per person)

Other suitable cuts: Chuck Eye Steak, Filet Mignon, Top Sirloin Filet, Tri-Tip

  • Za'atar Spice Blend from Charleston Spice Co. (Contains: Sesame Seeds, Sumac Berries, Thyme)

  • Salt

  • Freshly Ground Pepper

  • 2 T Fat for cooking (Recommend: Coconut Oil, Lard, or Bacon Fat)


  • Reminder: It is best to thoroughly defrost all meat to room temperature before firing so that it cooks evenly and you are more precisely able to hit your target internal temperature

  • Sprinkle the top and bottom of the steak(s) with salt and freshly ground pepper

  • Roll the edges of the steak(s) in Za'atar Seasoning or other sesame seed blend (this way the sesame seeds are not burned while searing the steaks)

  • Add fat to cast iron skillet or stainless steel pan and heat up pan on medium flame

  • Sear hard for 1 1/2 mins each side and then temp. with meat thermometer

  • Pull at 115 ° for Medium Rare

  • Place on cutting board and let rest in open air for 10 minutes (leave the kitchen if necessary)

  • Slice and serve
